The seminal work on Nepalese cities (in the Kathmandu Valley), carried by a team of architects and Indologists since the late Sixties, is:

Niels Gutschow and my late friend Bernhard Koelver on Bhaktapur and other cities in Nepal, see the seminal small book:
B. Kölver - N. Gutschow, Ordered Space. Concepts and Functions in a town of Nepal, Wiesbaden-Kathmandu 1975

And in their wake:
Gutschow, Niels. Ritual as mediator of space in Kathmandu/ Nepal, Journal of the Nepal Research Centre, Vol. 1, (Wiesbaden/Kathmandu) 1977

Ritual Space in India. Studies in Architectural Anthropology, ed. J. Piepert, (Art and Archeology research papers) London 1980

Lienhard, 4/8, [Heritage of the Kathmandu Valley.Proceedings of an International Conference in Lübeck, June 1985; ed. by N. Gutschow and A. Michaels] St. Augustin 1987, pp. 105-134

and sections of his great, underused book MESOCOSM (about the town of Bhaktapur):

Various books and articles by Axel Michaels on the Pasupati area and on  Benares:

Michaels, Axel.  Die Reisen der Götter : der nepalische Paśupatinātha-Tempel und sein rituelles Umfeld / Axel Michaels ; mit einem Beiheft Paśupitakṣetra - maps of Deopatan / by Axel Michaels and Govinda Tandan ; with drawings by Harald Fritzenkötter.
Bonn : VGH Wissenschaftsverlag, 1994.

cf. also sections of his great book:  Hinduism : past and present / Axel Michaels ; translated by Barbara Harshav.
Princeton, N.J. : Princeton University Press, c2004.

Toffin, Gérard. Panauti, une ville au Népal, Paris, Berger-Levrault, 1981.

Three important studies of Banaras:

Jonathan Parry, _Death in Banaras_

Sandria Freitag, ed., _Culture and Power in Banaras_

Lawrence Cohen, "Holi in Banaras and the _Mahaland_ of Modernity"

I should also add that some of the most interesting work being produced in connection with my own particular interest, the religious production or organization of urban space in contemporary India, takes up Muslim and Buddhist examples. As companion pieces to Smriti Srinivas's terrific book on Bangalore I would recommend Nicolas Jaoul and Gary Tartakov on Ambedkar parks and statues in urban North India and Mrinalini Rajagopalan on Islamic architecture in Delhi.
