Projects

The overarching theme of my research efforts is to investigate the health benefits of foods and to enhance human health through the use of safe and nutritious food products.

I am especially interested in the bioactive compounds with health benefits beyond nutritional value. These bioactive compounds have the potential to prevent cancer and other chronic diseases. In particular, my work in sulforaphane derived from broccoli and broccoli sprouts has shown that this natural compound is a very powerful cancer chemopreventive agent. This natural product not only prevents cancer initiation by removing carcinogens and inhibits established tumors by suppressing cancer cell proliferation and inducing apoptosis, but also shows promise in killing cancer stem cells (or tumor-initiating cells).

I am currently focusing on:
            (1) Development of extracts and functional food products from broccoli/broccoli sprouts which are enriched in anti-cancer agents and evaluation of cancer chemopreventive efficacy
            (2) Investigate the effects of cooking on the retention of bioactive food components and other nutrients. These projects will lay a solid foundation for future research in this area.
